A LITTLE SOMETHING
This is a very simple concept! I´ll bake a healthy cake a week and gift it to someone in Titirangi. Additionally I invite others to bake and gift.
Receive a cake
Even though most of us would love to get a random cake delivered, I thought I would prioritise people who are experiencing a big change in their lives, e.g. the arrival of a newborn.
Gift a cake
I can imagine that many people would love a cake, so one cake a week isn´t going to get us far. I am thus inviting other families to participate. If you fancy baking, please join me.
This is a free favour and includes delivery within Titirangi.

RECIPES
What is a healthy cake? It is not my goal to answer that question here. Instead I look for recipes that don´t contain refined sugars and white flour and still taste great. If you have a good recipe, please do share.
Banana Cake
Really nice one, a favourite.
Ingredients
3 mashed bananas
2 eggs
1/2 cup milk
1/2 cup apple sauce
1 tsp vanilla
1 cup almond flour
1/2 cup spelt flour
1/2 cup rolled oats
1/2 tsp salt
1 tsp backing powder
1 tsp baking soda
1tsp cinnamon
I sometimes add walnuts too
Date Balls
Great snacks.
Ingredients
- 2 cups pitted dates
- 1/4 cup + 2 Tbsp warm water
- 3/4 cup oats
- 3/4 cup seeds and nuts. Last time I used 1/4 walnuts, 1/4 peanuts, 1/4 ground almonds.
- 1 cup coconut flakes
- Last time I also added cocoa powder (maybe 2 tbsp) and peanut butter (also approx 2 tbsp)
Pancakes
Great breakfast or snack.
Ingredients
- 2 bananas (roughly mashed – good to have some pieces left)
- 1-2 tbsp almond butter
- 1 egg
- Cinnamon
MUESLI COOKIES
Nice chocolate alternative.
Ingredients
- 2 5dl Muesli (I used Ceres Organics golden crunch)
- 1/2 dl agave syrop
- 1 dl peanut butter
- 1/2 dl coconut oil
- 1/2 dl cacao powder (I used much less)
- A bit of vanilla
MUESLI COOKIES
Nice chocolate alternative.
Ingredients
- 175 gr dates
- 125 gr raisins
- 60 gr oats
- 350 ml boiling water
- 150 gr mixed nuts and seeds
- 2 eggs
- 200 gr spelt wholemeal flour
- 2,5 tsp baking powder
- 0,5 tsp baking soda
- 0,5 tsp salt
- Heat oven 160 degrees
- Combine chopped dates, raisins, oats and water and let soak for 15 min
- Mix your nuts and seeds, chop the bigger nuts
- Set 2 -3 tbsp of nut mix aside
- Mix all ingredients (but those 2-3 tbsp of nut mix)
- Pour into form and cover with remaining nuts
- Bake for an hour
- .… enjoy
